Three Graces Farm and Dairy is a farmstead cheese operation in western North Carolina. To be classified as farmstead cheese, all cheese must be made from the farm’s herd, on the farm where the animals are raised. Three Graces utilize the milk from goats, sheep and cows to produce a wide variety of cheeses, often inspired by the Burgundy region of France. And while the name three graces is to honor those three animals that produce on their farm, three graces is also a reference to Greek mythology and the three daughters of Zeus. These women were stewards of nature, representing the ideals of beauty, mirth and hospitality which are the embodied in the practices of all those that work at Three Graces Dairy. The animals are provided with a hearty diet of grain and pasture, maintained without the use of herbicides or pesticides. These practices alongside a thoughtful mix of breeds makes Three Graces capable of executing some exquisite cheeses.
